I grew up in Wigan, a town where the locals are known as the 'pie-eaters' and where you'd find a bakery on every corner selling pies, pasties and basically every pastry based food item you can think of.

One of my favourites was a cheese and onion pasty which was a regular treat.  These days, I choose not to indulge based on the calories and fat content but have created my own, much healthier version which is a dish both me and the husband really enjoy.

The simple change is to use filo pastry and make your own filling which is really quick and easy to do.

Ingredients

  • One sheet of filo pastry per pasty (I use Theos filo pastry as pictured which you buy in Tescos)
  • Boiled potatoes
  • Onion
  • Cheese (I use Red Leicester for both flavour and colour and use 30g per person)
  • Salt and pepper 
  • spray oil (needed to help stick the pasty together)


Method

1) Prepare your filling (and its really easy)

Roughly mash your potatoes, I leave lumps in

Chop your onion

Grate the cheese 

Mix all together and season to taste


2) take one sheet of filo pastry per pasty, fold in half and add your filling to one side of the pastry - leaving about a 2cm gap at the top, bottom and side


3) spray the 2cm gaps with your spray oil and fold over the empty side of the pastry and press down to stick together


4) Spray all of the edges with the spray oil and fold them in, pressing down to seal 


5) put your pasties on greaseproof paper and bake in the oven.  I do them on a low heat to allow the filling to heat through and the filo pastry to go a golden brown (about 160 for about 30 minutes)


Serve with homemade chips and beans or with a salad and enjoy!
