If you've gone a bit mad with the cheap Christmas veg offers in the supermarkets or have ended up with a surplus of veg and just can't face another roast dinner, make up a batch of my delicious coleslaw which is a quick and easy way to use up any spare veg and can be enjoyed as a side dish with anything.

Ingredients

There's no set rule here as to what vegetables you use so you can just add in whatever takes your fancy.  For this latest batch I used:

  • one medium carrot (peeled into long thin strips using my julienne veg peeler)
  • Brussel sprouts - grated using a cheese grater
  • A red onion - thinly sliced
  • Some radishes that needed using up
  • An apple - sliced into match sticks
  • Fresh herbs - finely chopped (I used coriander as that's what I had in, but have used parsley in the past)
  • Natural fat free yoghurt
  • 1/2 tsp of mustard powder
  • 1/2 tsp of black pepper
  • 1/2 tsp of dried herbs (again, you can use whatever you like or have in - I used chives and oregano)

Method

1) Prepare all of the raw veg (and fruit if you are adding) and add to a large bowl.  As mentioned above, you can add whatever you have or whatever you like to the coleslaw.
I normally always use shredded white cabbage, I have also used parsnip, grated broccoli, grated cauliflower and spring onions in the past.  On the fruit side, I've also added grapes in the past.  

I like the sweetness of the apple the most but I know its a controversial addition so you can just leave it out if you'd prefer.

Word of warning: if you have red cabbage (which I love), if you pre make the coleslaw in advance, it will turn pink by the time you want to serve it. 

 

2) Give it a good stir to mix all the raw ingredients together 

3) Add in your dried herbs and spices and give it another stir.

4) Last step - add in your natural fat free yoghurt.  I don't have an exact measurement as I add it in one spoon at a time until I get an even coating.  


It's honestly yummy, goes well with anything (and even the sprout haters in the family probably won't even have a clue that you've hidden the little green bundles of goodness inside!)
