October is one of my favourite months as I love the colour change of all the trees, donning scarves and hats every day as well as lots of my favourite veg are in season and warming wintery dishes are back on the menu!
My last blog post was how to make a simple pumpkin puree which I use in lots of dishes and this is one of my favourite recipes and a real tasty treat with only a few ingredients
- 40g of plain porridge oats
- 1 large egg or 2 small ones
- 100g of pumpkin puree
- 25g of dried mixed fruit (optional)
- half a tsp of mixed spice and half a tsp of ginger powder (you can swap mixed spice for cinnamon)
- a splash of water (you can swap to milk if you'd prefer)
1. Mix all of the ingredients together in a bowl
2. The best description of the mixture is that it should be 'sloppy' - if its too dry, add a bit more water or milk.
3. Spray a silicone mould with low calorie spray oil or use paper bases and add your mixture in.
4. Put in a preheated oven. I put mine in on a lower heat and cook for longer - 180ºC / gas mark 4 for about 30 minutes until firm to touch and golden brown
5. Leave to cool slightly before removing from the mould and either serve immediately as they are or top with a fat free yogurt of your choice.
I often double up the ingredients to make 2 batches as they are equally delicious cold and last a few days in the fridge.
